Crab Salad Croissants With Peaches And Pecans
Ingredients
- 1 c. Cooked crab meat in small pcs (chicken or possibly salmon can be substituted)
- 1/4 c. Minced green onion
- 1/4 c. Minced celery
- 1 lrg Peach
- 1/4 c. Pecan halves Mayonnaise Salt
- 2 x Fresh baked croissants Leaf lettuce Alfalfa sprouts
Directions
- Combine crab, green onion and celery. Peel peach, cut half into slices for garnish, dice remaining half and add in to crab mix along with half the pecans. Add in just sufficient mayonnaise to moisten. Add in a little salt to taste if needed. Split croissants and fill with crab salad plus a lettuce leaf. Garnish plate with alfalfa sprouts, reserved peach slices and pecans.
- Yield: 2 servings.
