  • CORNMEAL CHICKEN NUGGETS

      Cornmeal chicken nuggets recipe is a change from the floured chicken nuggets and we like them just as well.  This is an easy recipe to make and a different way to use chicken.  I buy the chicken breasts when they are on sale and cut them into nuggets.  You can make as many as you like. They are great dipped in salsa or our recipes for homemade buttermilk ranch dressing or honey mustard sauce.  Make these for a quick weeknight meal your family will love.  I like having these nuggets cooked and in the fridge for a snack during the day when I get hungry and they help to curb my appetite until dinner or the next meal. Ingredients for Cornmeal Chicken Nuggets 2 to 3 large chicken breasts 1 egg 1/2 cup buttermilk or regular milk 1 cup cornmeal 1/2 teaspoon salt 1/4 teaspoon black pepper 1 tablespoon Cajun seasoning (check out our recipe for making your own Cajun seasoning) 2/3 cup oil for frying Directions Cut chicken breasts into cubes.  Whisk together the egg with the buttermilk in a bowl.  Whisk together the cornmeal, salt, black pepper and Cajun seasoning in another bowl.  Dip the chicken nuggets into the egg and buttermilk and then into the cornmeal mixture.  Have oil hot in skillet on top of the stove.  Brown nuggets, then turn to simmer and cover skillet for about 15 minutes. I had two very large chicken breasts and made 40 nuggets.  Enjoy!
