    • 2 lbs cod fish (generally comes salted)
    • 1 ripe tomato.
    • 1 cubanela pepper (you can also use bell)
    • ½ white onion
    • ½ red pepper

    “Holy week” (Last week of lent) is a very big deal in Dominican Republic, so I keep bringing you traditional non meat recipes, which are popular in the DR but on these days become even more.

    Cod fish is a very popular fish along with herring. Dominicans love it. It’s not only a Dominican thing, as Puertoricans probably like it as much or more than Dominicans. We can safely say it’s a Caribbean thing.

    Cod fish scrambled eggs

    Ingredients

    4 eggs.

    Salt and pepper to taste.

    Directions

    Salted cod is very salty. We generally put in water overnight, change the water in the morning and then again before cooking. You then boil for about 15 minutes, take out the bones and put on a bowl.

    Some people desalt it by just boiling in water with some salt and then throwing away that water and taking out the bones.

    Stir fry the tomatoes, onions and peppers, once they’re lightly cooked add the cod fish and allow to cook a bit, then add the eggs and mix well.

    Check salt and pepper, add some oil and allow to mix well. We like to add the little oil, because it’s amazing for dipping in your boiled yuca (cassava) or plantains. It’s also nice with white rice or tortilla.

    This is a very traditional lunch or dinner in DR and we almost always serve with a side of boiled plantains and yuca. (cassava)
