    Ingredients

    • 2 cans of coconut milk (I usually use the Goya coconut milk)
    • 1 can of evaporated milk + one equal part of water to dilute the milk
    • 1 tsp. of vanilla
    • Sugar to taste
    • 1 pinch of salt
    • 1 pinch of cinnamon

    Coconut Ice or Limber de Coco

    Coconut Ice or Limber de coco is a typical Puerto Rican and Dominican frozen dessert. Typically, it is sold home-made from people’s home. Although these frozen desserts are made using many other flavors, like tamarind, orange, etc., the most popular flavor is the coconut. I have so many good memories of buying limber de coco (coconut ice) while I was growing up. I don’t know what it is, but the minute you taste a limber de coco, you are so ready for the next one.

    There are many ways to prepare Limber de Coco. Limber de coco tastes best when you use fresh coconut milk, but not many people is willing to spend the time. This is a basic recipe for limber de coco or coconut ice. All you need to do is mix and freeze!

    Instructions

    Dilute the evaporated milk by adding an equal amount of water.

    Pour into a blender the diluted evaporate milk, the coconut milk, and the rest of the ingredients. Blend well.

    Pour mixture into ice-cube trays, or into plastic disposable cups. Freeze.

    Enjoy!

    Note: Make sure to get coconut milk and NOT coconut cream

    Caution: Once you eat one, you will eat the rest of them.
