Coconut Crisps

- 2 cups flour
- 3/4 tsp baking powder
- 1/4 tsp salt
- 3/4 cup butter, softened
- 1 cup sugar
- 1 large egg
- 1 tsp vanilla
- 1 1/2 cups shredded sweetened coconut
Directions
- Preheat the oven to 375 F
- Combine the flour, baking powder, and salt in a medium bowl.
- Beat the butter and the sugar in a mixer bowl at medium speed until light and fluffy.
- Beat in the egg and vanilla.
- With the mixer at low speed, beat in the dry ingredients just until combined.
- Stir in the coconut.
- Drop the dough by level tablespoonfuls onto ungreased cookie sheets.
- With the bottom of a glass dipped in flour, flatten each cookie to 1/4 inch thickness.
- Press with the back of a fork to form ridges.
- Bake for 10 to 12 minutes or until the edges are golden.
- Transfer to racks to cool
