Coconut Crisps

Ingredients

  • 2 cups flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 1/2 cups shredded sweetened coconut

Directions

  1. Preheat the oven to 375 F
  2. Combine the flour, baking powder, and salt in a medium bowl.
  3. Beat the butter and the sugar in a mixer bowl at medium speed until light and fluffy.
  4. Beat in the egg and vanilla.
  5. With the mixer at low speed, beat in the dry ingredients just until combined.
  6. Stir in the coconut.
  7. Drop the dough by level tablespoonfuls onto ungreased cookie sheets.
  8. With the bottom of a glass dipped in flour, flatten each cookie to 1/4 inch thickness.
  9. Press with the back of a fork to form ridges.
  10. Bake for 10 to 12 minutes or until the edges are golden.
  11. Transfer to racks to cool
