Since we also serve the gefilte fish, only my husband and I have salmon. He can't eat gefilte fish, since it is not gluten free except for the time of the year (Spring), when it is made without matzah meal for the holiday of Passover (Pesach).
Salmon with nuts has always been a success. I have made it with pecans and with almonds and both were delicious. The walnuts did not fail us either.
Coated Walnut-Maple Salmon
Method:
Preheat oven to 350 degrees F.
In a shallow bowl, put the maple syrup mixed with the lemon juice.
In a second bowl, put the chopped walnuts.
Prepare a baking pan, (larger than a square and smaller than a rectangle) (referring to baking sizes) by spraying with cooking oil. I use canola.
Dip the salmon piece, by piece, into the maple syrup mix and then into the chopped walnuts.
Coat on both sides.
Place the coated pieces into the baking pan.
Place in preheated oven and bake for 30 minutes.
Check for doneness.
Take out and plate with a nice salad and you are in for a yummy meal.
