  • Cinnamon Flax Scones

    Ingredients

    • 1 3/4 c. all purpose flour
    • 1/4 c. grnd flaxseed
    • 1/3 c. turbinado sugar
    • 1/2 tsp baking soda
    • 2 tsp baking pwdr
    • 1/2 tsp salt
    • 1 1/2 tsp cinnamon
    • 1/3 c. butter or possibly shortening
    • 3/4 c. buttermilk
    • 1/2 c. raisins (optional)

    Directions

    1. Thoroughly mix flour, grnd flax seed, sugar, baking soda, baking pwdr, salt and cinnamon. Cut butter or possibly shortening into dry ingredients till a pea- sided, mealy texture is formed. Add in buttermilk. Don't overmix. Place dough on floured breadboard with raisins. Knead 5-7 times to incorporate the raisins. Roll till dough is 1/2 inch thick. Cut into triangles 2 inches wide by 4 inches long. Place on an ungreased baking sheet. Brush with an egg white glaze prior to baking. Bake at 375 for approximately 25 min.
    2. Yields-12 scones.
