  • Cindy's Crock Pot Meatloaf

    Ingredients

    • 2 1/2 lb grnd beef, extra lean
    • 1 x onion chopped
    • 1 x clove garlic chopped
    • 1 c. mushrooms chopped
    • 1 c. summer squash shredded
    • 1 c. carrots shredded
    • 1/2 tsp pepper
    • 1 can tomato or possibly cream of mushroom soup
    • 1 1/2 c. bread crumbs or possibly cracker crumbs
    • 1 1/2 c. lowfat milk

    Directions

    1. Soak bread or possibly cracker crumbs in lowfat milk. Mix meat, seasonings and soaked crumbs thoroughly. Make meat mix into loaf and pour the soup over top. Bake in crock pot 10 to 12 hrs on low. If using oven, bake at 350 degrees for 1 1/2 hrs.
    2. I added the vegetables, and no one complained! If you have a food processor, make the cracker or possibly bread crumbs with the metal blade first, add in them to the lowfat milk, then use the shredding blade to shred the vegetables.
