This Chopped Greek Salad with Red Wine Vinaigrette definitely meets my salad expectations. This gorgeous, fresh salad is filled with so many lovely and bright flavors that play deliciously together. It looks and tastes like one giant vegetable garden in a bowl. I realize I’ve been tardy here for a while. But it’s for good reason. Of course, that reason is really a multitude of reasons. First there is the work I create for my clients, family time, getting over what seemed like the longest cold ever and of course a little winter wandering in the snow filled cascades. Because what is winter without a little wandering? And, it’s how I recharge my creative well. I have to tell you that I may not be quite as diligent in posting recipes here as I once was. I’m starting a project that will take most of the year to complete. I can’t say too much about it except that it’s a book. Yes, a real, live book! It won’t be published until next year but I’ll certainly write more details here as time goes by. So check back often or subscribe to the blog to receive the most up to date posts. I do post on Instagram and Facebook more often. It seems to be a little easier to give you an update via those outlets than it does here. But I’ll still be here when I can, posting new recipes from time to time. And stories about the book project!

Karista Print Chopped Greek Salad with Red Wine Vinaigrette Rate this recipe 123451 ratings Category: Salad Cuisine: Greek 6-8 People A salad vibrant in color and zesty in flavor, you’ll want to make it every week. Ingredients ¼ cup red wine vinegar 1 tablespoon chopped fresh oregano or 2 teaspoons dried oregano 1 teaspoon sugar 1 tablespoon Dijon mustard ¾ cup extra virgin olive oil Salt and pepper to taste 1 head Romaine lettuce, chopped 1 teaspoon good quality salt or sea salt ½ red onion, diced ½ cup diced Kalamata olives 1 cup chickpeas ½ cup diced yellow or orange peppers ½ cup diced cucumbers ½ cup chopped sun dried tomatoes (in olive oil) ¼ cup capers, rinsed ¼ cup chopped parsley ½ cup crumbled feta cheese ½ cup artichoke hearts (optional) Instructions Whisk together the vinegar, oregano, sugar, mustard and olive oil. Season to taste with salt and pepper. Place the chopped romaine in a large mixing bowl and toss with the one teaspoon of salt. Then add the red onion, olives, chickpeas, peppers, cucumbers, sun dried tomatoes, capers, parsley, feta cheese and artichoke hearts if using. Drizzle with the red wine vinaigrette and toss to combine. Serve immediately and garnish with extra feta cheese or chopped parsley.
