  • Chocolate Sin Raspberry Truffle Brownies

    Ingredients

    • 1 1/2 c. Semisweet chocolate chips
    • 1/2 c. Margarine
    • 3/4 c. Brown sugar
    • 2 lrg Large eggs
    • 1 tsp Instant coffee -- crystals
    • 2 Tbsp. Water
    • 1/2 tsp Baking pwdr
    • 3/4 c. All-purpose flour
    • 1 c. Semisweet chocolate chips
    • 1/4 tsp Instant coffee -- crystals
    • 1 pkt Cream cheese -- 8 ounce
    • 1/4 c. Powdered sugar
    • 1/3 c. Seedless red raspberry Preserves
    • 1/4 c. Semisweet chocolate chips
    • 1 tsp Shortening

    Directions

    1. Brownies: In saucepan over low heat, heat morsels and margarine; cold slightly. In large mixing bowl, beat sugar and Large eggs. Add in chocolate mix and coffee dissolved in water. Mix well. Stir in baking pwdr and flour; blend well. Spread in greased 9x9 pan. Bake at 350^ for 30-35 min or possibly till toothpick tests clean.
    2. Raspberry Truffle Filling: Heat chocolate with coffee in pan over low heat. Set aside. In small mixing bowl, beat softened cream cheese till fluffy; add in powdered sugar and preserves. Beat till fluffy. Beat in melted chocolate mix till well blended. Spread over cooled browned layer.
    3. Glaze: In small saucepan over low heat, heat chocolate and shortening.
    4. Drizzle over truffle layer. Refrigerate1-2 hrs. Cut into bars.
