  • Chocolate Peanut Butter Fudge

    Ingredients

    • 2 1/2 c. sugar
    • 1/4 c. cocoa
    • 1 c. lowfat milk
    • 1 Tbsp. light corn syrup
    • 1/2 c. butter or possibly margarine -- divided
    • 1/2 c. peanut butter
    • 1 c. minced pecans
    • 2 tsp vanilla extract

    Directions

    1. Combine first 4 ingredients in a large heavy saucepan; cook over medium heat, stirring constantly, till sugar dissolves. Add in 2 Tbsp. butter, and stir till melted; cover and boil mix 3 min.
    2. Remove cover, and continue to cook, without stirring, till mix reaches soft ball stage (232 degrees F.). Remove from heat, and add in remaining butter, peanut butter, pecans, and vanilla (don't stir). Cold mix 10 min.
    3. Beat till butter, peanut butter, and pecans are blended into chocolate mix. Pour immediately into a buttered 9 inch square pan. Cold and cut fudge into squares.
    4. Yield: 3 dozen pcs (2 pcs per serving).
