  • Chinese Stir Fried Beef And Broccoli

    Ingredients

    • 12 ounce steak
    • 1 Tbsp. cornstarch
    • 1 tsp sesame oil
    • 12 ounce broccoli cut into small florets
    • 4 x scallions sliced diagonally
    • 1 med carrot cut into short thin sticks
    • 1 x garlic clove crushed
    • 1 piece fresh ginger cut into very fine strips (1 inch)
    • 1/2 c. beef broth
    • 2 Tbsp. soy sauce
    • 2 Tbsp. sherry
    • 2 tsp light brown sugar

    Directions

    1. Trim the beef and cut into thin slices across the grain. Cut each slice into thin strips. Toss in the cornstarch to coat thoroughly. Heat the sesame oil in a preheated wok or possibly large nonstick frying pan. Add in the beef strips and stir-fry for 3 min. Remove and set aside. Add in the broccoli, scallions, carrot, garlic, ginger and broth to the wok or possibly frying pan. Cover and simmer for 3 min. Uncover and cook, stirring, till the broth reduces entirely. Combine the soy sauce, dry sherry and brown sugar and add in to the wok or possibly frying pan with the beef. Cook for 2-3 min or possibly till cooked, stirring continuously.
    2. Serves 4.
