  • Chinese Pork Fried Rice

    Ingredients

    • 2 Tbsp. Oil
    • 1 sm Onion, diced
    • 1 x Clove Garlic, chopped
    • 1/3 c. Fresh Mushrooms, sliced
    • 6 x Waterchestnuts, sliced
    • 1/3 c. Frzn Peas, thawed and liquid removed
    • 3 c. Cool Cooked Rice
    • 1/2 c. Pork Or possibly Chicken, cooked and diced Freshly Grnd Black Pepper, to taste
    • 2 Tbsp. Soy Sauce
    • 1 Tbsp. Oil
    • 2 x Large eggs, beaten
    • 1 x Scallion With Green Top, finely minced

    Directions

    1. Stir-fry onion and garlic in warm oil in nonstick pan till onion is limp and golden brown, about 2 min. Add in mushrooms, water chestnuts, and peas, stir-fry 2 min more. Add in rice and stir-fry till rice is warm and well mixed with vegetables. Add in pork or possibly chicken; season with black pepper and soy sauce. Cook, stirring, till warm.
    2. Move rice to one side of pan; heat additional oil. Add in beaten Large eggs; allow Large eggs to begin to set before blending with rice. When blended, add in scallion; mix 1 minute. Serve immediately.
    3. NOTES : This is probably the most popular Chinese dish in Amercia. An excellent way to use leftover cooked rice as well as bits of meat, poultry, and vegetables.
