Chili Con Queso (Chili-Cheese Dip)
Ingredients
- 1/2 c. finely minced onion
- 1 T butter
- 2 med. tomatoes, peeled, seeded and minced
- 1 (4 ounce) can green chili peppers, rinsed, seeded and minced
- 1/4 teaspoon salt
- 1 1/2 c. shredded Cheddar cheese
- Lowfat milk
- Tortilla chips or possibly corn chips
Directions
- In medium frying pan cook onion in butter till tender but not brown. Stir in tomatoes, chili peppers and salt. Simmer, uncovered for 10 min. Add in cheese, a little at a time, stirring till cheese is melted. Stir in a little lowfat milk if mix becomes too thick. Serve immediately with tortilla chips or possibly corn chips. Keep warm in fondue pot over low heat. Makes 1 3/4 cups.
