Chili Con Queso (Chili-Cheese Dip)

Ingredients

  • 1/2 c. finely minced onion
  • 1 T butter
  • 2 med. tomatoes, peeled, seeded and minced
  • 1 (4 ounce) can green chili peppers, rinsed, seeded and minced
  • 1/4 teaspoon salt
  • 1 1/2 c. shredded Cheddar cheese
  • Lowfat milk
  • Tortilla chips or possibly corn chips

Directions

  1. In medium frying pan cook onion in butter till tender but not brown. Stir in tomatoes, chili peppers and salt. Simmer, uncovered for 10 min. Add in cheese, a little at a time, stirring till cheese is melted. Stir in a little lowfat milk if mix becomes too thick. Serve immediately with tortilla chips or possibly corn chips. Keep warm in fondue pot over low heat. Makes 1 3/4 cups.
