CHICKEN SOUP
This is one of my old-time favorite recipes. It goes without saying, the simpler, the better. Try this simple and appetizing chicken soup...good for the winter season. Ingredients
- 1/2 kg. chicken, cut up
- 1 liter water
- 1 chicken cube
- 1 tsp. salt
- 1/2 tsp. MSG
- 5 peppercorns
- 1 egg, beaten
- CORNSTARCH SOLUTION:
- 1/4 c. cornstarch
- 1/4 c. water
Directions
- Combine the first 6 ingredients in a saucepan. Simmer for at least 30 minutes or until chicken is tender.
- Take out chicken and shred.
- Strain soup by colander.
- Put chicken and soup in a pan. Simmer for 10 minutes.
- Slowly pour in egg, gently stirring.
- Thicken soup by cornstarch solution.
- Serve with vinegar and chopped green chili.
