Chicken Scallopini
Ingredients
- 5 lbs Skinless, boneless chicken breasts
- Flour
- Extra virgin olive oil
- 2 pcs Green peppers
- 2 pcs Onions
- 1 lb Whole mushrooms, sliced
- 1 can Chicken broth
- Cream sherry to taste
Directions
- Lb. chicken breasts and coat with flour.
- Saute/fry chicken in extra virgin olive oil till lightly brown and place in roasting pan.
- Saute/fry vegetables and place in pan on top of the chicken.
- Pour can of soup and sherry over the chicken and vegetables.
- Bake at 350 for one hour.
