Chicken Salad Lunch
This is a great lunch that I made up while looking for a healthier version of chicken salad with leftover chicken. I made after dinner and packed for the next days lunch. I used lettuce to make little taco like wraps. Ingredients
- 3 oz cooked chicken breast, chopped
- 1 tbsp. fat free plain greek yogurt
- 4 red grapes, cut in half or quarters
- 1 tsp raw sunflower kernels
- 2 tsp minced onion
- pinch of dried dill weed
- pinch of garlic powder
- lettuce leaves 2-4 leaves
Directions
- Mix all ingredients in a small bowl, best if you refrigerate for at least an hour for the flavors to come out. Use the lettuce leaves as wraps for the chicken salad and enjoy.
