    Chicken Parmigiana is a favorite of The Husband. He always orders this particular dish at any Italian restaurant we visit. Since we are trying to eat healthy in the New Year this was one of the favorite classic dishes that I wanted to rework a little. This recipe was so easy and turned out to be very tasty!

    Ingredients

    • 4 chicken breasts
    • 1 tablespoon olive oil
    • 2 cups tomato sauce
    • 2 teaspoons basil
    • 1 clove garlic minced
    • 1 cup Parmesan cheese
    • 4 cups angel hair pasta, cooked

    Directions

    1. In a skillet heat up olive oil. Place chicken breasts in pan and cook until they are done all the way through and have a nice golden brown appearance. While the chicken breasts are cooking, place the tomato sauce, basil and garlic in a saucepan. Bring to a boil and simmer until chicken breasts are done. Cook angel hair pasta according to package directions.
    2. Put the chicken breasts in a small casserole dish, cover with approximately 1-2 tablespoons of sauce and 1/4 cup Parmesan cheese. Place in the oven under the broiler until the cheese is hot and bubbly.
    3. Place 1 cup of pasta each on 4 plates, divide the sauce evenly among the pasta. Place the chicken breast over the sauce. Enjoy! Serves 4.
