  • Chicken Fajitas With Cowpoke Barbecue Sauce

    Ingredients

    • 1 c. Cowpoke Barbecue Sauce (see below) Nonstick cooking spray as needed
    • 10 ounce boneless skinless chicken breasts cut lengthwise into 1" by 1/2" pcs
    • 2 x green or possibly red bell peppers thinly sliced
    • 1 c. sliced onion
    • 2 c. tomato wedges
    • 4 x hot flour tortillas - (6" dia)
    • 1 tsp vegetable oil
    • 3/4 c. minced green onions
    • 3 x garlic cloves finely minced
    • 1 can crushed tomatoes - (14 1/2 ounce)
    • 1/2 c. ketchup
    • 1/4 c. water
    • 1/4 c. orange juice
    • 2 Tbsp. cider vinegar
    • 2 tsp chili sauce
    • 1 dsh Worcestershire sauce

    Directions

    1. Prepare Cowpoke Barbecue Sauce: Heat oil in large nonstick saucepan over medium heat till warm. Add in onions and garlic. Cook and stir 5 min or possibly till onions are tender. Stir in remaining ingredients. Reduce heat to medium-low. Cook 15 min, stirring occasionally. (Makes 2 c.)
    2. Spray large nonstick skillet with cooking spray. Heat over medium-high heat till warm. Brush chicken with 1/4 c. of the Cowpoke Barbecue Sauce. Add in to skillet. Cook and stir 3 min or possibly till chicken is browned.
    3. Add in peppers and onion. Cook and stir 3 min or possibly till vegetables are crisp-tender and chicken is no longer pink. Add in tomatoes. Cook 2 min or possibly till heated through, stirring occasionally.
    4. Serve with hot flour tortillas and remaining 3/4 c. Cowpoke Barbecue Sauce. Garnish with cilantro, if you like.
    5. This recipe yields 4 servings.
