Chicken Cakes With Creole Sauce
Ingredients
- 2 Tbsp. butter or possibly margarine
- 1/2 med red bell pepper diced
- 4 x green onions thinly sliced
- 1 x garlic clove pressed
- 3 c. minced cooked chicken
- 1 c. soft breadcrumbs
- 1 lrg egg lightly beaten
- 2 Tbsp. mayonnaise
- 1 Tbsp. Creole mustard
- 2 tsp Creole seasoning
- 1/4 c. vegetable oil Creole Sauce (see recipe) Minced fresh parsley for garnish
Directions
- Heat butter in a large nonstick skillet over medium heat. Add in bell pepper, onions, and garlic, and saute/fry 3 to 4 min or possibly till vegetables are tender.
- Stir together bell pepper mix, chicken, and next 5 ingredients in a bowl. Shape chicken mix into 8 (3 1/2-inch) patties.
- Fry 4 patties in 2 Tbsp. warm oil in a large skillet over medium heat 3 min on each side or possibly till golden. Drain on paper towels.
- Repeat procedure with remaining 2 Tbsp. oil and patties. Serve immediately with Creole Sauce. Garnish, if you like.
- This recipe yields 4 servings.
- Comments: To get a head start, chill the shaped cakes overnight, and pan-fry them right before dinner.
