  • Chicken Cacciatore (Hunter's Chicken)

    Ingredients

    • 2 lb Chicken pcs - (to 2 1/2 lbs) All-purpose flour
    • 2 Tbsp. Extra-virgin extra virgin olive oil
    • 2 Tbsp. Butter
    • 3 Tbsp. Chopped shallots
    • 1 tsp Chopped garlic
    • 6 med Mushrooms sliced
    • 1 can Tomato paste - (6 ounce)
    • 1/2 c. White wine
    • 1 3/4 c. Diced tomatoes
    • 1/2 tsp Salt
    • 1/4 tsp Grnd white pepper
    • 1 sm Bay leaf
    • 3/4 tsp Fresh thyme leaves
    • 1 1/2 tsp Minced fresh basil
    • 3/4 tsp Minced fresh marjoram Cooked linguine

    Directions

    1. Lightly coat chicken pcs with flour. Heat extra virgin olive oil and butter in large Dutch oven. Saute/fry chicken pcs, a few at a time, till browned on all sides. Remove chicken from pan. If you like, remove skin from chicken.
    2. Saute/fry shallots, garlic and mushrooms in Dutch oven till softened, 3 to 5 min. Stir in tomato paste and wine. Add in tomatoes, salt, pepper, bay leaf, thyme, basil and marjoram.
    3. Return chicken to pan. Cover and simmer over low heat till chicken is tender, 35 min. Remove bay leaf. Serve chicken and sauce with cooked linguine.
    4. Yield: 4 servings.
