  • Country Club Drive Chicken (Rose Marie's)

    Ingredients

    • 5 x apples peeled, cored, and minced
    • 1 bn scallions, white and green parts sliced
    • 1 lb chicken thighs deboned, skinned, all fat removed, cut into 2" by 2" pcs
    • 5 sm slices Swiss cheese
    • 1 can Campbell's reduced-fat cream of chicken soup well blended with
    • 1/4 c. lowfat milk
    • 1 box Pepperidge Farm Stuffing with Apples and Raisins
    • 4 Tbsp. melted butter or possibly margarine
    • 1 sm carton apple juice - (the kind kids get in their lunch boxes with attached straws)

    Directions

    1. Layer in 3-1/2 qt crockpot in same order as above. Pour soup mix over cheese layer, butter over stuffing and finally juice, making sure which liquid moistens all of the bread.
    2. Cook on HIGH for 3 1/2 hrs and on LOW for another 1 1/2 hrs.
    3. You may eat it without anything, but since it makes a wonderful sauce and the stuffing sort of disappears into the dish, it is recommended serving it with plain rice.
