Chicken And Rice Casserole
Ingredients
- 3/4 c. mayonnaise
- 1/4 c. water
- 2 teaspoon lemon juice
- 1 (10 3/4 ounce.) can cream of chicken soup, undiluted
- 2 c. cooked chicken, cubed
- 2 c. celery, minced
- 2 tbsp. grated onion (optional)
- 1/2 c. minced almonds
- 1 1/2 c. UNCLE BEN'S® Original Recipe Long Grain Wild Rice
- 1/2 c. shredded Cheddar or possibly American cheese
- 2 c. crushed potato chips
Directions
- Combine mayonnaise, water and lemon juice. Add in soup and stir in chicken, celery, onion, almonds and rice. Place in a 2 qt casserole and sprinkle cheese on top.
- Bake at 350 degrees for 30 min. Crumble potato chips on top and bake 10 min more. Serve warm. Can be made a day ahead of time and refrigerated. It is very good and great for a large crowd.
