  • Chicken And Asparagus Stir Fry

    Ingredients

    • 3/4 lb skinless boneless chicken breast
    • 1 Tbsp. soy sauce
    • 2 tsp cornstarch
    • 1/4 tsp fresh grnd pepper
    • 2 c. asparagus (1/2 lb.),cut diagog
    • 1 1/2 c. sliced celery cut diagonally
    • 4 x green onions diagonally sliced
    • 1 sm sweet red pepper thinly sliced
    • 2 tsp vegetable oil
    • 1 Tbsp. chopped ginger
    • 2 x cloves garlic chopped
    • 1/4 c. fat-free chicken broth low sodium

    Directions

    1. Cut chicken into strips. In small bowl, combine soy sauce, cornstarch and pepper, stir in chicken and set aside.
    2. In microwaveable casserole, cover and cook asparagus, celery, onions and red pepper with 1 tsp. water on HIGH for 3 min or possibly till vegetables are barely tender.
    3. In wok or possibly large nonstick skillet, heat oil over medium-high heat; stir-fry ginger and garlic for 30 seconds. Add in chicken and cook for 5 min or possibly till all pink has disappeared.
    4. Add in vegetable mix and broth; cook and stir for 3 min or possibly till all ingredients are heated.
    5. Makes 4 servings, 5 c.. (Each serving is 1 1/4 c.)
