Chewy Granola Cookies
The King Arthur Flour Cookie Companion Chewy !! Ingredients
- 6 tbsp unsalted butter
- 1 tbsp vegetable oil
- 1 cup brown sugar
- 1/2 tsp soda
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tsp vanilla
- 2 large eggs
- 1/4 cup yogurt, plain or vanilla, regular, lowfat, or nonfat
- 1 cup plus 2 tbsp flour
- 2 1/4 cups granola
Directions
- Preheat the oven to 350 F
- Lightly grease (or line with parchment) two baking sheets
- In a large bowl, cream together the butter, oil, brown sugar, baking soda, salt, cinnamon, nutmeg, and the vanilla
- Add the eggs, one at a time
- Beat well after each addition.
- Beat in the yogurt
- Stir in the flour
- Add the granola
- Drop the dough by the tablespoonful onto the prepared baking sheets
- Bake the cookies for 12 minutes
- They will still be light tan
- Don't let them brown or they will be crisp instead of chewy
- Remove them from the oven
- Allow the cookies to cool on the baking sheet for 5 minutes
- Carefully transfer them to a rack
- They will be delicate when they are warm
- Then become chewy as they cool
