Chewy Granola Cookies

Ingredients

  • 6 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 cup brown sugar
  • 1/2 tsp soda
  • 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp vanilla
  • 2 large eggs
  • 1/4 cup yogurt, plain or vanilla, regular, lowfat, or nonfat
  • 1 cup plus 2 tbsp flour
  • 2 1/4 cups granola

Directions

  1. Preheat the oven to 350 F
  2. Lightly grease (or line with parchment) two baking sheets
  3. In a large bowl, cream together the butter, oil, brown sugar, baking soda, salt, cinnamon, nutmeg, and the vanilla
  4. Add the eggs, one at a time
  5. Beat well after each addition.
  6. Beat in the yogurt
  7. Stir in the flour
  8. Add the granola
  9. Drop the dough by the tablespoonful onto the prepared baking sheets
  10. Bake the cookies for 12 minutes
  11. They will still be light tan
  12. Don't let them brown or they will be crisp instead of chewy
  13. Remove them from the oven
  14. Allow the cookies to cool on the baking sheet for 5 minutes
  15. Carefully transfer them to a rack
  16. They will be delicate when they are warm
  17. Then become chewy as they cool
