  • Cheesy Grits Souffle

    Ingredients

    • 1 c. old-fashioned or possibly quick cooking grits (but not instant)
    • 4 c. water
    • 4 Tbsp. butter
    • 1 bn scallions minced
    • 2 x garlic cloves chopped
    • 1/4 tsp crushed red pepper
    • 1/2 tsp salt
    • 1/2 tsp freshly-grnd black pepper or possibly to taste
    • 1 1/2 c. coarsely-grated cheddar
    • 1/2 c. crumbled crispy bacon
    • 1/2 c. egg whites - (from 4 Large eggs)

    Directions

    1. In a saucepan, bring 4 c. of water to a boil over high heat and stir in grits. Return to a boil and reduce heat to low, cover pan and cook, stirring occasionally, till grits are smooth and creamy, 10 to 20 min (depending on type of grits used). Transfer grits to a large bowl and allow to cold, stirring frequently to prevent a skin from forming.
    2. In a skillet heat butter and saute/fry scallions and garlic till softened and fragrant, 3 to 4 min.
    3. When grits are cooled, stir in sauteed scallions and season with crushed red pepper, salt, black pepper, grated cheese and crumbled bacon. Preheat oven to 350 degrees. Butter a 9- by 13-inch heavy gratin dish or possibly cast iron skillet and set aside.
    4. In a large bowl beat egg whites with a healthy pinch of salt till stiff peaks form. Gently mix 1/3 of the beaten whites into the grit mix, then mix in remaining whites, being careful to not overmix. Transfer to prepared baking dish and bake in top of oven for 30 to 40 min, till risen and golden on top. Serve immediately.
    5. This recipe yields 6 servings.
