- 1 heaping tablespoon earth balance
- 1 chayote squash, peeled & diced
- ½ cup white onion, sliced thin
- ½ small serrano pepper, minced
- 1 cup (3 leaves) bok choy
- ½ cup black beans, rinsed
- ½ cup cooked rice
- ¼ teaspoon cumin
- ¼ teaspoon coriander
- ½ teaspoon Penzey's Arizona Dreaming (or chili powder)
