Salsa Ole Meatloaf with Corn & Black Beans
If you like the southwestern flavorings, you should like this. I’ve added black beans and corn to a meatloaf. Ingredients
- 1 1.2 lbs. lean ground beef
- 1/2 cup salsa or picante sauce (I used Pace Picante)
- 3/4 cup frozen corn
- 3/4 cup black beans (drained)
- 1 egg (lightly beaten)
- 1 1/4 teaspoons ground cumin
- 3/4 cup shredded cheese (I used reduced fat 4 cheese Mexican)
Directions
- 1) In a bowl, mix all of the ingredients together thoroughly.
- 2) Put it into a baking pan, and form it into a loaf.
- 3) Bake at 325 degrees F for 1 1/2 hours.
