  • Couscous With Corn And Black Beans

    Ingredients

    • 1 1/2 c. Water
    • 1 c. Couscous
    • 1 x 15-ounce can black beans, rinsed and liquid removed
    • 1 x 10-ounce pkg frzn whole-kernel corn, thawed and liquid removed
    • 3 Tbsp. Orange juice
    • 1 tsp Grated lemon rind
    • 3 Tbsp. Fresh lemon juice
    • 2 Tbsp. Extra virgin olive oil
    • 1/4 tsp Salt
    • 1/4 tsp Grnd cumin, * used rounded 1/4t
    • 1/8 tsp Coarsely grnd pepper

    Directions

    1. Bring water to a boil in a medium saucepan and stir in coucouse. Remove from heat; cover and let stand 5 min .
    2. Meanwhile, combine parsely, beans, and corn in a large bowl. Combine orange juice, lemon rind, lemon juice, extra virgin olive oil, salt, cumin, and pepper; stir.
    3. When couscous are ready, fluff with fork; toss with bean-corn mix. Add in orange juice mix to courcous mix; toss well.
    4. Yield: 4 1-1/4 c. servings [2-3 one-dish servings, or possibly 2 dinners+ 1 lunch]
    5. NOTES : Fast and yummy
