Carrot Cake With Cream Cheese Glaze
Ingredients
- 4 x Large eggs
- 3 Tbsp. Brown sugar, packed
- 4 tsp Vegetable oil
- 1 tsp Vanilla
- 1 1/3 c. Instant dry lowfat milk pwdr
- 3/4 c. Whole wheat flour
- 2 tsp Baking soda
- 2 tsp Grnd cinnamon
- 3 c. Grated carrots
- 1 c. Crushed pineapple, liquid removed
- 1/4 c. Dark raisins
Directions
- Spray an 8" tube pan with nonstick cooking spray and set aside. Combine Large eggs, sugar, oil, and vanilla; beat well. With mixer at low speed, beat in lowfat milk pwdr, flour, baking soda, and cinnamon, till throroughly combined.
- Stir in remaining ingrediends. Pour into pan and bake 40-45 min, till cake tests done. Cold in pan for 5 min. Remove cake from pan; drizzle with CREAM CHEESE GLAZE.
