Carrot Cake With Cream Cheese Glaze

Ingredients

  • 4 x Large eggs
  • 3 Tbsp. Brown sugar, packed
  • 4 tsp Vegetable oil
  • 1 tsp Vanilla
  • 1 1/3 c. Instant dry lowfat milk pwdr
  • 3/4 c. Whole wheat flour
  • 2 tsp Baking soda
  • 2 tsp Grnd cinnamon
  • 3 c. Grated carrots
  • 1 c. Crushed pineapple, liquid removed
  • 1/4 c. Dark raisins

Directions

  1. Spray an 8" tube pan with nonstick cooking spray and set aside. Combine Large eggs, sugar, oil, and vanilla; beat well. With mixer at low speed, beat in lowfat milk pwdr, flour, baking soda, and cinnamon, till throroughly combined.
  2. Stir in remaining ingrediends. Pour into pan and bake 40-45 min, till cake tests done. Cold in pan for 5 min. Remove cake from pan; drizzle with CREAM CHEESE GLAZE.
