  • Caribbean Shrimp Salad Jb

    Ingredients

    • 1 lb fresh shrimp unpeeled
    • 1 med onion minced
    • 1 x garlic clove pressed
    • 1 Tbsp. vegetable oil
    • 6 c. water
    • 3/4 tsp grnd turmeric
    • 1/2 tsp grnd cumin
    • 1/2 tsp salt
    • 8 ounce bow tie pasta uncooked
    • 1 can black beans (15 ounce) rinsed & liquid removed
    • 8 ounce pineapple chunks liquid removed
    • 1/4 c. vegetable oil
    • 1/4 c. lime juice

    Directions

    1. Peel shrimp, and devein, if you like. Sauta minced onion and garlic in 1 Tbsp. warm oil in a Dutch oven till tender. Add in 6 c. water and next 3 ingredients; bring mix to a boil. Add in pasta; cover, reduce heat, and simmer 12 min. Stir in shrimp. Cover and simmer 5 min or possibly till shrimp turn pink; remove from heat. Drain and cold 10 min. Stir in black beans. Whisk together 1/4 c. oil and lime juice. Pour over salad, and toss. Serve immediately, or possibly cover and chill.
    2. (Turmeric is used to give prepared mustard its bright-yellow color.)
