Breezy Caribbean Shrimp And Grape Wraps
Ingredients
- 2 c. warm cooked rice
- 2 Tbsp. minced onion
- 2 Tbsp. Anaheim chili pepper minced
- 1 x clove garlic chopped
- 2 tsp vegetable oil
- 12 ounce peeled medium shrimp
- 1/2 tsp lime peel grated
- 1/2 tsp dry thyme crushed
- 1/8 tsp grnd black pepper
- 1/8 tsp grnd cinnamon
- 1 1/2 c. seedless grapes halved
- 2 tsp fresh lime juice
- 1/8 tsp bottled warm pepper seasoning
- 1/2 c. mango chutney salt
- 4 lrg flour tortillas ten-inch diameter
Directions
- 1) Cook rice according to package directions.
- 2. Saute/fry onion, peppers and garlic in oil till the onion is tender. Add in shrimp, lime peel, thyme, pepper and cinnamon; saute/fry till shrimp is barely cooked. Add in grapes, lime juice and warm pepper seasoning; mix well and remove from heat. Mix rice and chutney; season to taste with salt.
- 3. Tightly wrap tortillas in heavy foil; heat at 350 degrees for 5 - 10 min. Spread tortillas on a clean dry surface. Portion -1/4 of the shrimp mix and -1/2 c. of the rice mix on -1/2 of each tortilla.
