Italian Penne And Shrimp Salad
Ingredients
- 2 c. cooked penne noodles
- 1 can artichoke hearts - (14 ounce) liquid removed, halved
- 2 x roasted red bell peppers from jar diced
- 2 tsp capers
- 1/2 c. pitted Kalamata olives
- 12 ounce cooked medium shrimp peeled, deveined
- 2 Tbsp. chopped fresh Italian parsley
- 2 Tbsp. chopped fresh basil
- 3/4 c. fat-free Italian salad dressing Salt to taste Freshly-grnd black pepper to taste
Directions
- Combine all ingredients and refrigeratefor 1 hour in the refrigerator before serving.
- This recipe yields 4 servings.
- Serving size: 1/2 c. penne, 3 ounces shrimp.
