Ingredients
2 c. cooked penne noodles
1 can artichoke hearts - (14 ounce) liquid removed, halved
2 x roasted red bell peppers from jar diced
2 tsp capers
1/2 c. pitted Kalamata olives
12 ounce cooked medium shrimp peeled, deveined
2 Tbsp. chopped fresh Italian parsley
2 Tbsp. chopped fresh basil
3/4 c. fat-free Italian salad dressing Salt to taste Freshly-grnd black pepper to taste
Directions
Combine all ingredients and refrigeratefor 1 hour in the refrigerator before serving.
This recipe yields 4 servings.
Serving size: 1/2 c. penne, 3 ounces shrimp.
