Ingredients

  • 2 c. cooked penne noodles
  • 1 can artichoke hearts - (14 ounce) liquid removed, halved
  • 2 x roasted red bell peppers from jar diced
  • 2 tsp capers
  • 1/2 c. pitted Kalamata olives
  • 12 ounce cooked medium shrimp peeled, deveined
  • 2 Tbsp. chopped fresh Italian parsley
  • 2 Tbsp. chopped fresh basil
  • 3/4 c. fat-free Italian salad dressing Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Combine all ingredients and refrigeratefor 1 hour in the refrigerator before serving.
  2. This recipe yields 4 servings.
  3. Serving size: 1/2 c. penne, 3 ounces shrimp.
