    It’s still salad season….. But the salads have switched from greens to grains or, in this case, pasta. Any kind of salad is welcome when the summer heat hits. In winter I love hearty soups and stews and lasagnes but in summer I want something light and easy that comes together with a minimal amount of work. And when half of that work is done outside by mon mari it’s even better. Author: Katie Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes Yield: 2 servings 1x Category: Pasta Salad Scale 1x2x3x Ingredients 8oz (240gr) sausages, any kind 4oz (125gr) fresn mozzarella, sliced into bite-size pieces  12 – 16 cherry tomatoes, cut in half  1 avocado, sliced fresh basil  leaves fresh chives 1 1/4 cups (4oz, 120gr) dried farfalle 1 tbs white Balsamic vinegar 1 tbs Balsamic vinegar 2 tbs good olive oil  Instructions Cook pasta according to package directions. When done, drain and rinse lightly with cold water.   Cook sausages on barbecue grill for 8 – 12 minutes or until done OR pan fry for same amount of time, until done. Cut sausages into 1 inch slices.  Add tomato, mozzarella, sausage and chives to pasta and toss lightly.   In a bowl whisk the oil, a little at a time, into the vinegars.  Add to pasta, tossing to combine.   Arrange avocado slices around the edge of the pasta and top with basil leaves. Serve. Notes A little bit of mustard helps the vinaigrette to emulsify.10 Keywords: pasta salad, caprese salad, sausages As terrified as I am of spiders and centipedes in the house I am really not bothered by creepy crawly things when they’re outside. I was going to say ‘in their natural environment’ but for the monster European house spider that we are blessed with, the natural environment is inside houses. I’m not sure which is scarier – the house spider or the wolf spiders we had when we lived on a lake. I am not showing you photos…. Google it your own self. Even a photo of a spider will give me nightmares. On the other hand I found this interesting critter hiding under the hose yesterday: He has the longest antenne of any beetle I’ve seen. I believe I have, with the help of Google, identified it as a Longhorn Beetle. Apparently they are easily found in our area of France and, of the many species, 2 of them are protected. I really don’t need to know more…. I just thought it was cool and worth a trip back to the house for my camera. It left while I took the camera back inside (too hot to leave it outside) so I continued on with the watering. Thanks to our 38C (100F) days I’ve been doing a lot of watering.
