  • Cantaloupe With Chicken Salad

    Ingredients

    • 2 c. Cubed cooke chicken
    • 1 1/2 c. To 2 C Fresh blueberries
    • 1 c. Sliced celery
    • 1 c. Seedless green grapes, halved
    • 1/2 c. Sliced almonds
    • 3 x Cantaloupes, halved seeded
    • 1/2 c. Mayonnaise
    • 1/4 c. Lowfat sour cream
    • 1 Tbsp. Fresh lemon juice
    • 1 1/2 tsp Grated lemon peel
    • 1 1/2 tsp Sugar
    • 1 1/2 tsp Sugar substitute
    • 1/2 tsp Grnd ginger
    • 1/4 tsp Salt (optional)

    Directions

    1. In a large bowl, combine chicken, blueberries, celery, grapes and almonds. In a small bowl, mix dressing ingredients. Pour over the chicken mix and toss gently. Spoon into cantaloupe halves.
    2. Serves 6.
