Cake in a Cup

So...I went searching...and found a very simple and basic cake recipe. Then I got the genius idea to put said cake in a bowl for a single serving. I already had a set of small rimikins... and it worked. They just weren't big enough to hold a whole pineapple slice. So I got bigger ones. And they worked like a champ! Hope you enjoy! Ingredients
- 1 1/3 cups all-purpose flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 2/3 cup milk
- 1/4 cup + 2 tablespoons margarine or butter, softened
- 1 egg
- 1 teaspoon vanilla
- 1 can sliced pineapple
- 1 jar cherries
- 2 tablespoons brown sugar
- Pineapple juice from can
Directions
- In a bowl combine flour, egg, sugar and baking powder.
- Add milk, margarine or butter, egg and vanilla.
- Beat with an electric mixer on low speed until combined.
- Beat on medium speed for 1 minute.
- Grease each rimikin with butter all the way around.
- Add 1 slice pineapple to the middle of each bowl.
- Place 1 cherry in the middle of each pineapple slice.
- Pour enough batter in each bowl to fill 3/4 full.
- Bake in a 350 degree oven for 25 to 30 minutes or until a toothpick comes out clean.
- While cakes are cooking, put 2 tbl butter, 2 tbl brown sugar and juice from the pineapples in a pot. Cook until well blended.
- When done, remove from oven and run a knife around the edge of the bowl.
- Flip bowl over onto a plate
- Pour pineapple sauce over each cake.
