Buttermilk Cherry Crumb Cake

- 1 box of your favorite yellow cake mix
- 1 cup of all-purpose flour
- 3 tablespoons sugar
- 1 tsp baking powder
- 4 eggs
- 1½ cups buttermilk
- 1 tsp vanilla
- Dash of cinnamon
- Zest of 1 lemon
- Zest of 1 orange
- Juice of ½ orange
- ½ cup applesauce
- 1 tablespoon butter
- 1- 16 oz. can of cherries – drained
- 1 tablespoon orange marmalade
- Topping:
- ½ tablespoons of butter
- ½ cup of flour
- ¼ tablespoon of brown sugar
Directions
- Preheat Oven 350 degrees:
- In a large bowl combine all of the dry ingredients. In a smaller bowl combine all of the wet ingredients and mix well with an electric mixer.
- Combine both bowls and mix well with an electric mixer.
- Butter a baking dish and pour the mixture in the baking dish.
- Prepare the topping. Mix the drained cherries with the marmalade. Place the cherries on top and sprinkle the topping on top of the cake.
- Bake the cake for about 35-48 minutes or until the toothpick test comes clean.
