Buttermilk Cherry Crumb Cake

This cake is a delightful end to any meal or if you want to cheat a little for breakfast.

Ingredients

  • 1 box of your favorite yellow cake mix
  • 1 cup of all-purpose flour
  • 3 tablespoons sugar
  • 1 tsp baking powder
  • 4 eggs
  • 1½ cups buttermilk
  • 1 tsp vanilla
  • Dash of cinnamon
  • Zest of 1 lemon
  • Zest of 1 orange
  • Juice of ½ orange
  • ½ cup applesauce
  • 1 tablespoon butter
  • 1- 16 oz. can of cherries – drained
  • 1 tablespoon orange marmalade
  • Topping:
  • ½ tablespoons of butter
  • ½ cup of flour
  • ¼ tablespoon of brown sugar

Directions

  1. Preheat Oven 350 degrees:
  2. In a large bowl combine all of the dry ingredients. In a smaller bowl combine all of the wet ingredients and mix well with an electric mixer.
  3. Combine both bowls and mix well with an electric mixer.
  4. Butter a baking dish and pour the mixture in the baking dish.
  5. Prepare the topping. Mix the drained cherries with the marmalade. Place the cherries on top and sprinkle the topping on top of the cake.
  6. Bake the cake for about 35-48 minutes or until the toothpick test comes clean.
