Butter Roast Chicken
Don't let the name fool you, see tip for a reduced fat version. The delicate flavor of lemon makes this dish great. Ingredients
- 3 Lbs. Broiler/Fryer Chicken Cut Up
- 1/2 Cup Butter, Cubed
- 1/2 Cup Fresh Lemon Juice
- 1 Tbsp. Sweet Paprika
- 2 Tsp. Salt
- 1 Tsp. Black Pepper
- 1 Tsp. Light Brown Sugar
- 1/2 Tsp. Dried Rosemary, Crushed
- 1/8 Tsp. Ground Nutmeg
- 1/8 Tsp. Cayenne Pepper
Directions
- Place chicken in an ungreased 13-in. x 9-in. baking dish. Combine the remaining ingredients in a small saucepan; bring to a boil. Remove from the heat and pour over chicken.
- Bake, uncovered, at 325° for 1-1/2 hours or until juices run clear, basting occasionally.
- To Reduce Fat, Sodium & Calories But Not The Flavor; Try This:
- Remove the skin from chicken pieces and reduce butter to 1 Tablespoon and add 1/2 cup reduced sodium chicken broth. Follow instructions as above with this added change. This change slashes the fat by 70% and saturated fat by 80%, cut calories and sodium by about half and reduced cholesterol by more than a third.
