Erik's Perfect Roast Chicken
- 1 Tbsp. butter salt and pepper
- 6 1/2 lb roasting chicken, (6 1/2 to 7)
- Heat the oven to 425 degrees. Heat the butter in a small saucepan. Stir 1 tsp. salt and 1/2 tsp. pepper into the butter. Sprinkle 1 tsp. salt and 1/4 tsp. pepper in the cavity of the chicken. Put chicken, breast side up, in a roasting pan. Brush the skin with the melted butter mix. Roast the chicken in the preheated oven for 1 hour. Reduce the heat to 350 degrees and continue roasting (about 30 min longer), till the skin is golden and the juices run clear when the inside of the thigh is pierced with a fork.
