Brown Rice And Black Beans Mardi
Ingredients
- 2 1/4 c. Instant brown rice
- 1 3/4 c. Boiling water
- 2 x 15-ounce cans cooked black beans or possibly pinto beans undrained
- 2 Tbsp. Margarine
- 1 lrg Onion, minced
- 3 x Cloves garlic, minced
- 1 med Green pepper, minced
- 1/2 tsp Grnd cumin
- 1 1/2 c. Salsa
Directions
- Cook rice as per instructions on the box and set aside. In a large frying pan, saute/fry' onion, garlic and green pepper in margarine. Add in rice, beans, cumin and salsa and simmer about 20 min.
- NOTES : This can be served warm as a side dish or possibly cool as a Rice Salad on Bibb Lettuce.
