Ingredients

  • 2 1/4 c. Instant brown rice
  • 1 3/4 c. Boiling water
  • 2 x 15-ounce cans cooked black beans or possibly pinto beans undrained
  • 2 Tbsp. Margarine
  • 1 lrg Onion, minced
  • 3 x Cloves garlic, minced
  • 1 med Green pepper, minced
  • 1/2 tsp Grnd cumin
  • 1 1/2 c. Salsa

Directions

  1. Cook rice as per instructions on the box and set aside. In a large frying pan, saute/fry' onion, garlic and green pepper in margarine. Add in rice, beans, cumin and salsa and simmer about 20 min.
  2. NOTES : This can be served warm as a side dish or possibly cool as a Rice Salad on Bibb Lettuce.
