Cumin Rice And Black Beans
Ingredients
- 1 Tbsp. Vegetable oil
- 1 tsp Garlic, chopped
- 1 tsp Cumin seeds
- 1 c. Long grain rice
- 1 can Chicken broth (14 1/2 ounce.) Plus sufficient water to equal 3 c.
- 1/2 tsp Salt
- 1/4 tsp Freshly grnd pepper
- 1 x 15 ounce can black beans, liquid removed & rinsed Fresh cilantro, minced
Directions
- Heat oil in a large saucepan over medium high heat. Add in garlic and cumin; cook 30 seconds. Stir in rice. Add in chicken broth and water, salt and pepper. Bring to a boil, reduce heat and simmer covered 20 min. Stir in the beans; cook covered till beans are warm, about 2 min more. Place in serving dish and sprinkle with cilantro. Serve with Jerk Chicken.
