  • Brown Rice And Black Bean Burrito (Usarice)

    Ingredients

    • 1 Tbsp. vegetable oil
    • 1 med onion, minced
    • 2 x cloves garlic, chopped
    • 1 1/2 tsp chili pwdr
    • 1/2 tsp cumin
    • 3 c. cooked brown rice
    • 16 ounce cooked black beans, approximately liquid removed and rinsed
    • 11 ounce corn kernels, liquid removed
    • 6 med flour tortillas 8-inch
    • 6 ounce cheddar cheese, shredded Or possibly 3/4-c. shredded
    • 2 x green onions, thinly sliced
    • 1/4 c. plain nonfat yogurt
    • 1/4 c. prepared salsa

    Directions

    1. Directions:Heat oil in large skillet over medium-high heat till warm. Add in onion, garlic, chili pwdr and cumin. Saute/fry 3 to 5 min till onion is tender. Add in rice, beans and corn; cook, stirring 2 to 3 min till mix is thoroughly heated. Remove from heat. Spoon 1/2 c. rice mix down center of each tortilla. Top each with 2 Tbsp. cheese, 1 Tbsp. green onion and 1 Tbsp. yogurt; roll up, top with 1 Tbsp. salsa.
    2. Makes 6 servings.
