  • Baked Rice And Garbanzo Beans

    Ingredients

    • 1/2 x onion minced
    • 1 tsp cool-pressed extra virgin olive oil
    • 2 x garlic cloves minced
    • 2 1/2 c. cooked long-grain brown rice
    • 3/4 c. cooked or possibly canned garbanzo beans
    • 1/2 c. sliced black olives
    • 1 Tbsp. natural soy sauce
    • 1 Tbsp. nutritional yeast
    • 1/8 tsp grnd black pepper
    • 1/4 tsp paprika
    • 1/4 tsp dry basil
    • 1/4 tsp dry oregano

    Directions

    1. 1. Preheat the oven to 350F. In a skillet, saute/fry the onion in the extra virgin olive oil till golden brown. Add in the garlic and cook for 1 minute.
    2. 2. Mix all the ingredients well in a large mixing bowl and place in a lightly oiled casserole dish. Bake for 35 min. Serve with a green salad and lightly steamed greens or possibly vegetables.
    3. NOTES : Make this casserole in the morning or possibly the day before and bake it when you need it.
